We found this in the "Low-Carb Bible" and we love it on fish or pork.
- 3⁄4 cup chopped strawberry
- 1⁄3 cup chopped blueberries
- 2 tablespoons chopped bell peppers
- 2 tablespoons chopped carrots
- 1 tablespoon chopped onion
- 2 teaspoons cider vinegar
- 1 teaspoon minced jalapeno pepper
- 1⁄8 teaspoon ground ginger
- Combine all ingredients in a small bowl.
- Let stand 20 minutes to allow flavors to blend.
- Serve with grilled fish or pork or chicken.
