South Beach Snack Phase 1 " Pizzas "

I have recently started the South Beach diet and had to come up with a way for my wife and me to satisfy the craving of pizza so I came up with this little snack.


  1. Preheat the oven to Broil.
  2. Slice the tomato to 6 even slices .
  3. Top each slice with a tbsp of pesto and a slice of cheese.
  4. Broil until cheese is melted and eat away.

Very tasty. Even my husband loved it! I cut the beefsteak tomato into 4 servings so that they were thicker. So good! Thank you for this recipe.

Extremelly easy and absolutely DELICIOUS! I bet it would also be good with zucchini or cucumber. Thanks for sharing.
