I am on South Beach and made this recipe up. I love it for lunch. My Shoprite sells broccoli slaw in bags in the produce section. Phase 2 recipe.
- 1 -2 cup broccoli coleslaw mix
- 1 apple, chopped
- 1 tablespoon chopped walnuts
- 2 -3 tablespoons low-fat blue cheese dressing
- 1 tablespoon of crumbled blue cheese
- Mix all above ingredients together. Serve immediately.
- (Sometimes I add cubed chicken breast).
