This is a recipe of my mother-in-law's. It is soo good!!! I wasn't convinced by the list of ingredients but it was love at first bite! Cornbread is the perfect addition. It is sooo simple.
- Brown beef.
- Add everything else (don't drain juices from cans!!) and heat.
- How much simplier can it be.
I just made this soup and it's a little more spicy than I expected. It has good flavor, I just would probably use some bean other than the ranch bean, or do diced tomatoes rather than the rotel. For people that love soup with a kick, this is perfect.
so its not gourmet- but i thought it was quite yummy, and oh how easy! i ended up using italian wedding soup, 1 can black beans, one can pork and beans, and garlic tomatoes. i also added a bit of cumin. i thought it was quite tasty for a change from casserole style quick recipes, especially goes well with the cornbread muffins i made. thanks for a keeper!
We have called this Hearty Hodgepodge for years using pork n beans and Campbells soup - you're right it is great with cornbread!!
