Smoked Sweet Potatoes

"I came across this recipe when I was looking for ideas to fill up my smoker when smoking a turkey breast. I hate seeing all those unused shelves! I pack the shelves with whatever I can get my hands on....nuts, cheese and these delicious potatoes!"

• Ingredients: 2
• Serves: 4

ingredients

• 4 sweet potatoes
• 2 teaspoons vegetable oil

directions

1. Bake or microwave sweet potatoes in their skins until tender; brush vegetable oil lightly onto potatoes.
2. Cut a cross on top of each potato and squeeze to push the orange flesh up; place each potato on a piece of foil on rack in smoker.
3. Smoke for 30 minutes.
