- 5 ounces firm tofu, sliced into bite-size pieces
- 1 tablespoon peanut butter (creamy or crunch, you choose)
- 1 tablespoon soy sauce
- water
directions
- Place slice tofu, soy sauce and peanut butter in a small sauce pan.
- Add enough water to cover the tofu nearly fully.
- Let simmer over low heat until the sauce thickens.
- Serve hot with steamed rice.

YUM!! I made this one night for a girls' game night. As I was making it, a friend suggested I bake it after I cooked it on the stove. So, I did. For 20 minutes at 350. The edges were just a little crisp. And, it was amazing. I ended up sharing my dinner with everyone at the party. I also added red pepper flakes for a little kick. But, I have already made it again it was so good. Thanks, Nolita!

Like others, I spiced it up a bit?in my case, a little sriracha and a sprinkling of chopped green onion. Tom H's ideas to saute the tofu first, and thicken the sauce with a bit of corn starch were spot on. Since I was cooking with a full 14 oz package of tofu, I tripled the recipe. Very simple and tasty, will definitely make this again.

I love food. I always think that's one of the few things in life we should all spend more time with, have more care in the food we eat and how and how much.
