ingredients
- 2 lbs ground beef
- 1 small onion, peeled and chopped
- 2 (10 1/4 ounce) cans beef gravy
- 2 cups frozen corn
- 1 1⁄2 cups frozen peas
- 1 cup carrot, peeled and diced

For each casserole
- 2 -3 cups mashed potatoes
- 2 tablespoons butter, melted
- paprika
directions
- In a dutch oven or stockpot, cook the beef over medium heat.
- About halfway through add the onion.
- Cook until the beef is no longer pink, drain off the grease.
- Microwave the carrots for 2 minutes.
- Add the gravy and veggies.
- Cool and put into 2 freezer containers. I put them in freezer bags.
- To prepare: Thaw frozen beef mixture in the refrigerator.
- Put into a greased 2 quart baking dish.
- Top with mashed potatoes, melted butter and sprinkle with paprika.
- Bake uncovered at 350F for 30-35 minutes or until heated through.

Cottage Pie it is! I ALWAYS use fresh or frozen veggies, never canned, because the fresh or frozen veggies have the most nutrients in them and taste much fresher. I make my own gravy, instead of canned, too. Very easy and the taste is the bomb! There were no leftovers! Good thing I doubled the recipe! They brought their appetites and everyone went home happy and full!

<p>I am a stay at home mom with 5 wonderful children. When I have time I love to scrapbook and journal. I also crochet and do cross-stitch and enjoy reading my Bible. Sometimes I am all into trying new things then other times I only want old standbys. I like to get veggies into my picky kids by sneaking them in where they were not expecting them. I've learned that its improtant to try new things 2 or 3 times before you can really consider it rejected. Sometimes the second time you offer it to them they will scarf it down, when the first time they barely got down the mandatory taste bite. Go figure.</p>
