Savoury Sausage Bites

"I got this recipe from a leaflet the other day they look delicious. I have not had a chance to make them yet but I will be soon!"

• Ingredients: 8
• Serves: 12

ingredients

• 8 thick sausages
• 1 tablespoon chopped fresh parsley
• 1 teaspoon dried herbs
• 1 tablespoon red pesto sauce

• FOR THE DIP

• 6 tablespoons tomato ketchup
• 1 tablespoon malt vinegar
• 2 tablespoons brown sugar
• 1 tablespoon red pesto sauce

directions

1. Cut the sausage down their length and remove the skins. Place the meat in a bowl. Mix with the parsley, dried herds and pesto.
2. Divide the mixture into 12 balls and then press into patties.
3. Cook the patties on a griddle for 15 minutes, turning once.
4. Meanwhile, place the dip ingredients into a saucepan and stir well. Bring to the boil and simmer for 5 minutes. Remove from the heat and spoon into a serving bowl.

I used mild Italian sausage for this recipe, then mixed equal portions of dried basil, marjoram & oregano along with just a pinch of sage to spice it up even more. Even made my own red pesto sauce for this one! Simple preparation & quite tasty! Not something I usually have for breakfast, but a nice change of pace! [Made & reviewed for one of my adoptees in this Spring's Pick-A-Chef]
