I always get rave reviews when I make these enchiladas of halibut, green onions, fresh cilantro, sour cream, and Cheddar cheese."

Ingredients Nutrition

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Season the halibut with garlic powder, salt, and pepper; cook in microwave until slightly cooked, about 2 minutes.
  3. Mix together the green onion, bell pepper, cilantro, sour cream, mayonnaise and 1 cup Cheddar cheese in a bowl.
  4. Gently fold the halibut into the mixture.
  5. Prepare a 9x13 baking dish with cooking spray.
  6. Pour 1/2 of a can of enchilada sauce into the bottom of the baking dish.
  7. Pour 1 can of enchilada sauce into a bowl. Dip the tortillas, one at a time, into the sauce to lightly coat.
  8. Spoon the halibut in equal portions into the center of each tortilla.
  9. Make the enchiladas by tightly rolling the tortillas and place seam-side down in the baking dish.
  10. Pour the remaining enchilada sauce over top of the enchiladas.
  11. Sprinkle with 1 cup Cheddar cheese.
  12. Cover the dish with aluminum foil.
  13. Bake in preheated oven for 45 minutes.
  14. Top with avocado slices to serve.

This is really good, and different. All the cheese sort of detracts from the low-fatness of the fish, but oh well :). If it's bland, add some adobo.

My husband's a fisherman so we have lots of fish. I'm always looking for new fish recipes. I thought this one was great! It is easy and tasty. My husband felt it was a little bland but I had to leave out the bell peppers because he won't eat them. I think the next time I make this I will use chopped chiles instead of bell peppers. Thanks for sharing.
