Sauted Asparagus With Mushrooms

- 1 bunch asparagus
- 1 large shallot
- 2 garlic cloves
- 1⁄4 cup butter
- 8 ounces shiitake mushrooms or 8 ounces baby portabello mushrooms
- salt
- pepper
directions
- Dice the shallot.
- Dice the garlic.
- Cut the woody tips off of the asparagus.
- Bring a pot of water to a boil.
- Boil the asparagus for 4 minutes.
- Drain the asparagus.
- Stop the cooking process by pouring cold water over the asparagus.
- Melt the butter.
- Saute the shallot and garlic.
- Add the mushrooms and saute for 5 minutes.
- Add the asparagus.
- Season with salt and pepper.
- Let Saute on low for 5 minutes.
- Serve immediately,.
