Saltine-Lima Bean Microwave Casserole

"I'm a poor, rushed, college student, and this works pretty well for me on days when I need something cheap and fast. Doesn't hurt that it pretty much fills a requirement for each food group as well. I would imagine you can use other kinds of beans as well, I just happen to be one of the few people that like lima beans."

  • Put lima beans, water, salt and pepper in a microwave-safe bowl.
  • Cover, leaving a vent, and microwave on high for 3 minutes.
  • Add cheese and saltines, stir up until cheese is melted.
  • Eat and run on out the door.

  1. Woah, yum! I'm surprised how tasty this 'concoction' turned out! It seems like something I'd be able to throw together pretty easily with what's in my frequently-bare cupboards. I also imagine it's quite versatile: use different beans or different cheeses, or even different type of crackers. In addition to being poor-college-student food, it'd probably be a nice side dish for dinner and maybe even kid-friendly. I'll definitely make this one again - Thank you!
     
  2. awesome. i too am a rare lover of lima beans, as well as a college student. this will motivate me to stop and make something nutritious rather than grab the nearest junk food. i used half the cheese cheese, a bit more water, and excluded the salt as the saltines already had plenty.

I am in college at MSU, graduating in May '06. Starting living on my own in an apartment this year, so I love trying out new recipes and learning how to cook different things. Been trying to make all my own food lately, because I am a health freak and processed foods gross me out. Joined the Peace Corps, will be in Eastern Europe for the next couple of years starting in June.
