- 1 cup frozen lima beans
- 2 tablespoons water
- 1⁄2 cup crushed saltine crackers
- 1⁄4 cup shredded mozzarella cheese
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
directions
- Put lima beans, water, salt and pepper in a microwave-safe bowl.
- Cover, leaving a vent, and microwave on high for 3 minutes.
- Add cheese and saltines, stir up until cheese is melted.
- Eat and run on out the door.

Woah, yum! I'm surprised how tasty this 'concoction' turned out! It seems like something I'd be able to throw together pretty easily with what's in my frequently-bare cupboards. I also imagine it's quite versatile: use different beans or different cheeses, or even different type of crackers. In addition to being poor-college-student food, it'd probably be a nice side dish for dinner and maybe even kid-friendly. I'll definitely make this one again - Thank you!

I am in college at MSU, graduating in May '06. Starting living on my own in an apartment this year, so I love trying out new recipes and learning how to cook different things. Been trying to make all my own food lately, because I am a health freak and processed foods gross me out.
