From Oaxaca, Mexico the huachinango chile is large red jalapeno chile from Oaxaca, Mexico. The recipe combines green tomatillos with the red chiles for a colorful salsa.
- 1 lb fresh tomatillo, husks removed, quartered
- 1 large garlic clove
- 1⁄2 medium white onion, coarsely chopped
- 2 fresh huachinango chilies
- 12 -15 fresh cilantro stems
- 1 teaspoon coarse salt
- Place all the ingredients in a blender and process until smooth.
