  1. Sieve flour and salt into mixing bowl.
  2. Cut fat in flour into small pieces.
  3. Mix to stiff dough with cold water and added lemon juice.
  4. Turn on to lightly floured board.
  5. Roll into strip about 0.5 cm thick.
  6. Keep ends square and sides straight.
  7. Fold pastry by bringing side edges to middle, then top and bottom edges to middle. Fold in half.
  8. Press edges together.
  9. Whenever possible put into cold place for 10-15 minutes between rolling. Half turn roll out and fold again as before.
  10. Re-roll and use as required.
