Rosemary's Taco Salad

"A simple side dish to bring to a picnic or pot luck. This one's always a crowd pleaser and rarely do we get to bring any home with us! We find this is best when assembled fresh. If you wish to make ahead of time and assemble later, after the beef cools place in a container. Place the veggies and cheese in a separate container and bring along a bag of Doritos and a bottle of dressing. Warm the beef and assemble the salad."

ingredients

  • 12 lb ground beef
  • 1 (1 1/2 ounce) package mild taco seasoning (we use McCormicks)
  • 14 cup water
  • 14 head iceberg lettuce (chopped)
  • 12 large tomatoes (diced)
  • 12 cup shredded sharp cheddar cheese
  • 0.5 (12 1/2 ounce) bag Doritos, crushed (we use the regular flavor)
  • kraft Catalina dressing

directions

  • Brown beef and drain.
  • Add water and Taco Seasoning and simmer for 5 minutes.
  • Remove from heat and cool for 10 minutes.
  • In a large bowl combine beef and remaining ingredients.
  • Toss with Catalina dressing to coat.

  1. Awesome! I did add some black olives & avocado to make it more of a meal than side dish, otherwise everything the same. I doubled the beef/taco seasoning and saved half of that to make it the next day, too. I made this a few weeks ago and my husband can't stop talking about it. We'll be having it again real soon.
     
  2. Very sweet taco salad! Careful with the dressing otherwise the lettuce and Doritos get soggy and it's too sweet. I used 1lb of ground beef. Next time I won't crush the Doritos so finely. Will definitely make again!
     
  3. Taco salads are always a good crowd-pleaser and everyone seems to have their own version. The Catalina dressing (I used light) in this salad gives it a great tanginess. I added chopped onions and I think I'd also add some fresh cilantro next time. Thanx for sharing your version.

  5. This is the best...very addictive, you can't stop eating. Great for potlucks but not good as a leftover. go steelers ...thanks slim. I am also from steelers country.

From the heart of Steeler Country, I have fun feeding family (2 young boys) and friends. Lots and lots of friends during the football season (I did mention Steeler Country right?). I am an avid angler (trout mostly). I follow Steelers football and Penguins hockey religiously. The Pirates have sucked since I was a kid so baseball doesn't get any love in this family. :) I work as a technical consultant for a software company and my wife is a stay at home Mom. I only review recipes I like, so yes, I give out a disproportionate number of 5 star reviews. I don't see the value in bashing a recipe that just doesn't suit my taste. It doesn't benefit anyone.
