Roasted Parsnips

ingredients
- 3 tablespoons balsamic vinegar
- 1 tablespoon brown sugar
- 2 teaspoons chopped fresh rosemary
- 2 lbs peeled parsnips (2-inch-thick slices)
- 1 large red onion, peeled and quartered
- cooking spray
- 1 tablespoon olive oil
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon fresh ground black pepper
directions
- Combine the first 5 ingredients in a large zip-top plastic bag; seal and marinate in refrigerator 1 hour, turning twice.
- Remove parsnip and onion from bag, discarding marinade.
- Preheat oven to 500°.
- Place parsnip and onion in a shallow roasting pan coated with cooking spray.
- Drizzle with oil, and toss to coat. Sprinkle with salt and pepper. Bake at 500° for 30 minutes or until the parsnip is tender, stirring often.

Excellent parsnip recipe - I love parsnips and am always looking for new ways to enjoy them. I partially cooked the parsnips before marinating them - hd them in the marinade for 4 hours. The onions are really tasty too Bake time at 500 was still 30 minutes Recipe enjoyed by all A difinite do again recipe Made again on Dec 25 09 to go with our Roasted Chicken Christmas dinner - Loved them again

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
