Easy Everyday Low Carb


  1. Peel carrots. Cut into strips 3 inches long and ½ inch wide.
  2. In a large bowl combine carrots, olive oil and herbs.
  3. In a baking pan, spread carrots in a single layer.
  4. Roast, uncovered, in a 475* oven for 10 minutes, or until just tender.
  5. Sprinkle with salt.

Cut this in half for the DS, and I. Made for a nice little lunch. Great recipe, sure kids of all ages would like this too. I used basil, and not dill. Delish ! ! Made for Healthy Choices..
