- 1 (18 1/2 ounce) package of pillsbury butter recipe cake mix
- 1 (3 1/2 ounce) package butterscotch pudding mix
- 1⁄4 cup flour
- 3⁄4 cup vegetable oil
- 1 large egg
- butterscotch chips
directions
- In a mixing bowl combine first first five ingredients.
- Mix well.
- (the dough will be crumbly).
- Stir in desired amount of chips.
- Roll tablespoonfuls into balls.
- Place 2" apart on greased baking sheets.
- Bake at 350° for 10-12 minutes or until golden brown.
- Cool for 2 minutes BEFORE removing and then place on plate.

These cookies are incredibly rich! While they are easy to make, I mixed them by hand which reminded why I love my KitchenAid sooo much! Instead of butterscotch chips I used Heath bars toffee pieces, just to add to the richness! They are so rich I could only eat 1 cookie! DH had NO problem however. They looked like Pecan Sandies to us, but SO much better! DH has already asked me to make these again!

I stumbled across this recipe while looking for things to make with butterscotch chips since I had them in the house...Very easy and very good, the only thing I changed was, after I made the dough part it did taste really sweet so I added a little salt to it and they came out to rave reviews. Thanks so much for a very good and easy recipe.
