Healthiest alternative to alfredo and it's easy to make. Just blend ingredients together and heat. I adapted this from my Creamy Vegan Pesto Pasta with Broccoli (Creamy Vegan Pesto Pasta With Broccoli) to a simpler recipe. Tried it today with my Walnut Meatballs (Walnut Meatballs (Vegan)) and it tasted terrific! My husband has always been an alfredo lover and we both love the added taste of pesto in this creamy sauce (I don't think it would taste as good without the pesto). Hard to believe it's as good for you as it is! My husband also likes to sprinkle some parmesean cheese in the sauce. Though not vegan anymore it does taste great with it still being much healthier than most creamy sauces.
- 414.03 ml water
- 198.44 g firm tofu
- 236.59 ml cashews
- 2.46 ml black pepper
- 7.39 ml garlic salt
- 29.58 ml olive oil
- 14.79 ml nutritional yeast
- 9.85 ml mock poultry seasoning (I use Mckay's Vegan Chicken Seasoning)
- 59.16 ml liquid pesto sauce
- Blend all ingredients together in a blender.
- Heat to a boil on the stove while stirring constantly.
- Serve on top of cooked pasta and enjoy!
This is a lovely light-tasting sauce- I'd love to try it with your walnut meatballs! My mom especially enjoyed it. A sprinkle of course salt really completes it, IMO. We had it on pasta with salad and- what else?- Everything Dressing! Thanks for posting this great creation!
This is a great vegan replacement for Alfredo sauce. It came out a little greener than I expected (must have been the pesto I was using), but the TASTE is awesome - following the recipe exactly makes for perfect seasoning. I added one package of diced Lightlife Smart Deli ham slices to the sauce when I heated it - worked well. Thanks!!!
