  1. Preheat oven to 350 degrees F.
  2. Combine brown sugar and salt in a small bowl.
  3. Heat oil over medium-high heat in a non-stick pan.
  4. Sprinkle cajun seasoning on salmon filets.
  5. Cover the top of the fish with the brown sugar and salt mixture.
  6. Cook the filets skin side down in the pan for 2-3 minutes. Flip and cook for another 2-3 minutes.
  7. Transfer the fish to a shallow baking pan and bake 4-5 minutes or until the fish flakes easily.
  8. Serve immediately.
