Directions

  1. Set oven to 350 degrees.
  2. Grease 1 9" x 5" loaf pan.
  3. In a bowl, combine rye flour, cornmeal, whole wheat flour, baking powder, baking soda and caraway seeds.
  4. In a small bowl, beat eggs, molasses, milk and oil.
  5. Pour the wet ingredients over the dry ingredients; stir with a wooden spoon to blend.
  6. Pour batter into prepared loaf pan.
  7. Sprinkle with sesame seeds.
  8. Bake 50-60 minu8tes, or until loaf tests done.
  9. Remove bread from pan, cool on wire rack.

This was good and reminded me of Anadama bread. This wasn't the earthy pumpernickel I was craving, a bit too sweet for that. Also, I added about 1/2 teaspoon of salt as the batter was bland. A perfectly good quick bread.

I made this easy recipe on impulse and, aside from no caraway seeds in the pantry, I followed the directions! It was cooked in 50 minutes but I'd advise checking after 45 mins. The texture is not like bread, yet its not sweet like cake - "unique" is the word I would use for a description. Thanx Kitten!
