Psyced Mom's Tarragon Chicken Salad

Yummy all by itself, on top of a green salad or in a sandwich (we particularly like it on Sourdough). I personally prefer more pepper than I included here, but I am partial to pepper.

Ingredients Nutrition

  • 12 cup sour cream
  • 12 cup mayonnaise
  • 1 teaspoon black pepper, freshly ground (or more if you like)
  • 14 cup fresh tarragon leaves, coarsely chopped
  • 4 scallions, green and white parts, chopped
  • 12 cup parmesan cheese, shredded (can also use Parmesean mixed with others, such as Asiago)
  • 1 lb chicken, cooked, cooled, and chopped


  1. Thoroughly mix all ingredients except chicken.
  2. Fold in chicken.
  3. Chill at least 1 hour or overnight for best flavor.
