This recipe is from the Cajun Cuisine cookbook and always requested for Thanksgiving. I usually make these early in the day and reheat before dinner.
- 8 sweet potatoes
- 2 cups pecans, chopped
- 1 cup brown sugar
- 3⁄4 cup oleo (or butter)
- 1 pinch salt
- 1 teaspoon vanilla
- Bake sweet potatoes at 350 for about 1 hour, peel, slice and place in a buttered 9X13 inch baking dish.
- Mix together pecans, brown sugar, oleo, salt and vanilla in a saucepan; bring to a boil and cook for about 2-3 minutes.
- Pour over potatoes and bake at 350 for about 10 minutes.
