5-Ingredient Fix Contest Entry. Mashed potatoes layered with chiles & cheese, then baked until hot & served with tortilla chips for dipping.
- 1 1⁄2 cups Simply Potatoes Traditional Mashed Potatoes
- 1⁄2 cup canned diced green chiles
- 1 1⁄2 cups Mexican blend cheese, shredded
- 2 large eggs
- 4 cups tortilla chips
- Preheat the oven to 350 degrees F. Spoon half of the potatoes into a small casserole or souffle dish. Sprinkle with half of the chiles & half of the cheese. Spoon remaining potatoes over cheese & sprinkle with remaining chiles. In a small bowl beat the eggs until pale yellow in color. Pour over chiles & bake for 10-15 minutes or until eggs are set. Sprinkle with remaining cheese & bake for an additional 5 minutes or until cheese is melted & dip is heated through. Serve with tortilla chips for dipping.
