Crispy potato wedges, with healthy Oleve Oil and garlic. This is for garlic consenting adults ONLY!! Quantities per person. Also works with halved baby new potatoes, but will then only need 20 - 25 minutes cooking. Sweet potato needs 10 minute less cooking than ordinary potato. This is a VERY versatile recipe.
- Crush garlic and half of sea salt together and then mix with oil.
- Peel potato, halve it along long side, lay flat on chopping board and cut into 4 long wedges.
- Pat potato dry and coat it with the oil, garlic and salt mixture.
- Place on a non-stick baking sheet, sprinkle with remaining salt, place in preheated oven at gas 7, 220C, 450°F Check and turn after 25 minute, should be crisp and delicious after 35 - 40 minutes.
