Tasty and easy to prepare - and it is definitely a great use for leftovers! I used the basil and oregano option and added a little bit of shredded mozzerella with the Parmesan on top. Very enjoyable. Thanks for sharing! Veggie Swap 38

  1. Preheat oven to 450°F.
  2. Pat mashed potatoes into 4 small round shapes that are about 1/2 inch thick and place on an oiled baking sheet.
  3. Sprinkle with cheese and seasonings.
  4. Bake about 20 minutes (cheese should be golden).
