Nicely sweet and coconutty. Try to use Amaretto di Saronno in this as your amaretto. I think it really makes a difference.
- 28.34 g coconut rum (can use Parrot Bay or Malibu)
- 28.34 g Amaretto (I like Amaretto di Saronno)
- 113.39 g pineapple juice
- ice (as needed)
- Stir together rum, amaretto and juice and pour over ice.
- Garnish with fresh fruit or a cherry, if desired.
