I didn't know this recipe would turn out so good. Because the only wet thing in it is the oil. But with the garlic, roasted peppers, spinach and feta, it's so yummy. Thanks Elizabeth :) Made for PRMR tag game

Ingredients Nutrition

  • 8 ounces penne pasta
  • 2 teaspoons garlic, minced
  • 3 tablespoons olive oil
  • 4 ounces roasted red peppers, sliced
  • 6 ounces Baby Spinach
  • 4 ounces fat free feta cheese

Directions

  1. Cook 8 oz penne pasta until al dente. In a pan over medium heat, soften 2 tsp minced garlic in 2 Tbsp olive oil. Add 4 oz sliced roasted red peppers and 6 oz baby spinach. Cook until spinach wilts. Add pasta to skillet, sprinkle with 4 oz fat-free feta, and toss.
