Peppi's Stuffed Mushrooms

- 453.59 g mushroom, large
- 59.14 ml ham, minced
- 14.79 ml raisins, chopped
- 14.79 ml pine nuts, chopped
- 14.79 ml capers, chopped
- 29.58 ml butter
- 1 garlic clove, crushed
- 29.58 ml parsley, chopped, divided
- 0.61 ml salt
- 118.29 ml parmesan cheese, divided
directions
- Preheat oven to 375 degrees.
- Remove the stems from the mushrooms and chop.
- Scrape undersides of mushrooms into bowl using the handle of a teaspoon.
- Add chopped stems, ham, raisins, pine nuts and capers.
- Melt butter in a skillet, add mushroom mixture and cook until liquid has evaporated.
- Stir in garlic, one tablespoon of the parsley, salt and pepper and 1/4 cup of parmesan.
- Stuff mushrooms with mixture and arrange in a shallow buttered pan.
- Sprinkle remaining tablespoon of parsley and remaining 1/4 cup parmesan over mushrooms and bake 20 minutes.

Really enjoyed these! I thought if there was one drawback it was maybe the sweetness of the raisins didn't suit the mushroom juices and saltiness of the other ingredients so I think next time I'd leave them out. Only change I made was I only had dried parsley so used 1/2 tablespoon initially and didn't sprinkle over any additional amount before baking.

Most of the recipes I post have been successful with clients or family over the years however I am pretty lazy about entering them in my cookbook, but I am getting better. Also after being online for years I am utilizing Recipezaar as a means to organize all my online saved recipes and recipes yet to try. My other work days are working with my Dad in the Family Business which is in Transportation .
It says passions, well, I guess I have a passion for the search, the pouring over of recipes in cookbooks and the internet, most of the time I don't end up making any of them but I just love to look.
