Pepperoni Pasta Salad

- 4 ounces rotini pasta
- 2 cups grape tomatoes, halved
- 8 ounces provolone cheese, cubed (I use mozzarella sometimes)
- 1⁄2 cup green onion, sliced
- 2 ounces pepperoni, halved (I use turkey pepperoni! )
- 1 cup your favorite dressing (I use a italian parmesan herb one)
- 2 tablespoons mayonnaise, mixed into dressing if needed for creaminess (this depends on the type of dressing you buy)
- 1 teaspoon italian seasoning
directions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combined pasta, tomatoes, cheese, onions,pepperoni and italian seasoning.
- Pour dressing on top of pasta salad and toss to coat.
- Salt and pepper to taste.
- Chill for at least 30 minutes.

I'm 23 years old, married, have a two year old son and a daughter due August 9th, 2009. My husband and I live in beautiful Kailua, HI (where we born and raised!) with our mother in law, aunt in law, and brother in law. We recently implemented a new cooking plan that I cook two nights a week, MIL cooks two nights a week, BIL cooks two nights a week, and my hubby cooks one night a week (but I think I'll end up with his nights, haha!) So I am here to find easy and quick recipes to prepare for a decent sized family!
If you try any of the recipes I've actually posted, I'd love to hear your feedback, tips, and suggestions! I am a pretty novice cook and since my mother passed away when I was only 21, I have basically taught myself how to turn the stove on! Thank you! :)
