Penzey's Broiled Baby Zucchini

"I got this from Penzeys Spices Christmas 2006 Cookbook. I just wanted to get this down here, so I don't lose it."

• Serves: 4

ingredients

• 4 small zucchini, split length-wise
• 4.92 ml minced garlic (about one clove)
• 4.92 ml salt
• 1.23 ml pepper
• 14.79 ml minced fresh parsley or 14.79 ml chives
• 19.71 ml parmesan cheese
• 1 slice thick bacon, diced (divided) or 44.37 ml butter (divided)

directions

1. Slice the zucchini and arrange on a lightly greased baking sheet.
2. Sprinkle each slice with garlic, salt, pepper, parsley and cheese.
3. Top with diced bacon or pats of butter and broil on low, 10 minutes for bacon, 7 minutes for butter.
