Peg's Crispy Cookies

"A really easy, delicious chewy drop cookie that uses up the left over rice krispies after krispie treats. I got this from my next door neighbour, Hazel Bloomfield, a former baker. Excellent and carmelly, one of my kids long time favorites."

  • Preheat oven to 350°F.
  • Cream butter and sugar.
  • Beat in egg and vanilla.
  • Sift the dry ingredients and beat them into the sugar mixture.
  • Blend in rice krispies.
  • Shape into small balls (I use a 1-inch ice cream scoop) and press down with a sugar coated fork.
  • Bake for approximately 12 minutes or until pale golden.

  1. I have made cookies with rice crispies before but always with sticky marshmellow cremes or karo syrup and this recipe is great! Easy,quick and they keep!I sprayed Pam on the cookie sheets (just in case)I will make again and again. Thanks for posting. A pleasure to adopt you!
