Quick, easy and delicious side dish. I found this in Southern Living, November 2005. My family loves this one!
- 3⁄4 lb fresh broccoli florets
- 1 tablespoon butter
- 3 tablespoons chopped pecans, toasted
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- Arrange broccoli in a steamer basket over boiling water. Cover and steam 4 minutes or until crisp-tender. Plunge the broccoli into cold water to stop the cooking; drain.
- Heat butter in a large nonstick skillet over medium heat 2 to 3 minutes or until melted. Add broccoli, pecans, salt and pepper. Cook, stirring gently, 2 to 3 minutes or until thoroughly heated.
So simple that it makes you wonder why you didn't think of that before. The butter and the toasted pecans really add something to the flavor of the broccoli. I served this as a side with Creamy Baked Rice and some chicken, artichoke and mozzarella sausages, but it could easily pair with almost any meal. Great way to dress up plain old broccoli.
Can't sub olive oil in this one. Delicious.
The addition of pecans and butter is wonderful. Simple yet very flavorful. I always use almonds with veges, but will now use pecans on occasion.
