- 1 lb chicken breast, boneless, diced
- 1 (15 ounce) can great northern beans
- 1 (15 ounce) can red beans or (15 ounce) can red kidney beans
- 1 (15 ounce) can black beans
- 1 (4 1/2 ounce) can diced green chilies
- 2 (15 ounce) cans diced tomatoes
- 1 (1 1/4 ounce) packet chili seasoning mix
- 2 tablespoons olive oil
- salt and pepper
directions
- 1. In a large sauce pan, brown the diced chicken in olive oil.
- 2. Add the beans, chilies, and tomatoes.
- 3. Bring mixture to a boil over medium heat.
- 4. Add the chili seasoning mix.
- 5. Cover, turn heat to medium low and simmer one hour.
- 6. Garnish with green onions, sharp cheddar cheese, tortilla chips, and a dab of sour cream. ENJOY!
