Pasta Bows With Tuna, Olives & Capers

- 14 ounces bow tie pasta
- 6 tablespoons extra virgin olive oil
- 2 garlic cloves, crushed
- 14 ounces tuna in brine, drained
- 3 ounces pitted olives, halved
- 2 tablespoons capers, rinsed
- 2 ounces flat leaf parsley, roughly chopped
- salt and pepper
directions
- Cook pasta following pack instructions. Drain, reserving a few tablespoons of water in the bottom of the pan.
- Return the pasta to the pan over a low heat, stir in the olive oil and garlic and allow to infuse for 1 minute Toss through the remaining ingredients, season and serve.
