I love cheese.. I especially love Parmesan cheese. These are cheese crackers from cheese. Delish from Alton Brown. Be sure to use Parmigiano-Reggiano.

Nothing is easier than this one and it's really freakin good! I asked my nephew who is a chef to share some good party food recipes with me that were tasty and easy. This one was in the batch that he sent. They were a hit at my party! We served with ranch dressing. Thanks for posting this here!


  1. Preheat oven to 375°F.
  2. Grate cheese on the small hole side of a 4 sided box grated into a small bowl. Using a tablespoon measure, place cheese in mounds onto a nonstick silicone pad or greased parchment paper-lined cookie sheet. Flatten out mounds with the back of a spoon, making sure rounds are at least 4" apart. Season with pepper, paprika, or cayenne, if desired.
  3. Bake in the middle rack of the oven for 7 minutes or until golden.
  4. Cool and serve at room temperature.
