  • Heat the olive oil in a large, nonstick skillet over medium high heat.
  • Add the steamed green beans and red pepper flakes and cook until just starting to turn brown, about 7 minutes, stirring or tossing often.
  • Reduce the heat to medium low and stir in the garlic, salt and pepper.
  • Cook for two minutes and stir in the mint, lemon juice and zest.
  • Cook for one minute, stirring to combine all the ingredients and remove from the heat.
  • Serve warm or at room temperature.
  • Enjoy!

  1. This was good. I made a half recipe for DH and myself tonight with freshly picked beans and spearmint from the garden. It's a simple recipe, the cooking didn't take as long as the recipe suggested and it had just a little bite to it with the red pepper flakes which DH really enjoyed. Next time I will use less lemon juice since I found it a little tart and I may use more of the zest to still get the lemon flavor without the actual tartness. Overall it is a very nice way to prepare fresh green beans and I will make it again.
