A delightful fresh salad that goes great with Spanish and Mexican dishes.
- 3 large fresh organic tomatoes, chopped
- 2 (15 ounce) cansorganic corn, drained
- 2 tablespoons chopped fresh cilantro
- 1 organic lime, juice of
- 1 tablespoon of unfiltered extra virgin olive oil
- Juice the lime.
- Combine all ingredients into a medium sized bowl, toss well.
- Refrigerate until chilled through.
