This is great on muffins, etc.
- 1⁄2-1 cup butter, softened
- 3 tablespoons honey
- 1 1⁄2 teaspoons grated orange rind
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- Cream butter until light and fluffy.
- Add the other ingredients and beat until smooth and light.
Wonderful flavor. I used the lower amount of butter (1/2 cup) and intended to follow the rest of the recipe as given. I have a confession to make, though. :) Apparently, I was not paying attention, because I added 1 1/2 teaspoons cinnamon before I glanced back at the recipe and realized it was only supposed to be 1/2 teaspoon. Fortunately, we love cinnamon so this wasn't a problem; I ended up adding extra orange zest as well. Really loved it--thanks for posting!
