Orange, Ginger and Tofu Main Dish

- 1 (14 ounce) package extra firm tofu, cut into 1/4 inch slices
- 1⁄4 cup low sodium soy sauce or 1/4 cup Braggs liquid aminos
- 1⁄4 cup honey
- 2 mandarin oranges, peeled and seeded
- 1 tablespoon extra virgin olive oil
- 1⁄2 tablespoon minced garlic
- 2 cups broccoli florets
- 2⁄3 cup canned water chestnut
directions
- Mix together honey, soy sauce, and ginger together. Spoon sauce over tofu slices, than arrange tofu slices in baking pan. Place mandarin oranges over tofu slices. Bake at 400 for 20 minutes, or until tofu lightly browns.
- In pan, add oil, garlic, broccoli and chestnuts. Cook until garlic is browned and broccoli and chestnuts are crisp tender.
- Serve tofu, oranges, and vegetables over steamed or white rice.
