  • 1 (18 ounce) box cake mix, any flavor
  • 1 (1 1/2 ounce) box sugar-free gelatin mix, any flavor
  • 3 large eggs
  • 12 cup vegetable oil
  • 2 -3 tablespoons Dutch-processed cocoa powder (optional)

  • Preheat oven to 325°F Spray an 8x8" square cake pan liberally with non-stick spray.
  • Combine all ingredients in a bowl. Stir until well blended. Pour into prepared pan. Bake in preheated oven 20-25 minutes, until a toothpick inserted in the center comes out clean.
  • For a marbled effect, only add the gelatin to two-thirds of the cake batter. Pour the batter with the gelatin into the pan, then top with the plain batter and swirl together with the blade of a butter knife. Alternately, remove 1/3 of the batter and stir in a couple of tablespoons of cocoa powder; proceed as above.
  • Flavor combinations are endless. Try orange gelatin with a chocolate cake, or orange gelatin/white cake and the cocoa marble above. Try cherry or raspberry gelatin with chocolate cake, lemon gelatin with spice cake, or anything with yellow or white cake.

I'm a 48 y/o gay Jewish man in the suburbs immediately north of New York City. I'm a general internist, practicing and teaching at a medical college north of NYC. I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
