This goes great with celery, carrots, pears, apples and graham crackers. My cousin brought this recipe home from a Boy Scout meeting and my kids and nephew love it. It does need to chill for one hour before serving.
- 1 1⁄2 cups pumpkin, mashed well (not pumpkin pie mix)
- 1⁄2 cup peanut butter
- 2 tablespoons honey
- 1⁄4 teaspoon cinnamon
- 2 tablespoons dry roasted peanuts, finely chopped
- Combine pumpkin, peanut butter, honey, and cinnamon.
- Mix well.
- Chill for one hour.
- Before serving, top with chopped peanuts.
Followed your recipe right on down & we were treated to a great spread/dip! Definitely something to keep in mind for later in the year, as well, but we had no problem devouring it right in the middle of summer!
