My Mom's Ambrosia
- 1 (2 cup) package mini marshmallows
- 16 ounces sour cream
- 8 ounces mandarin oranges, drained
- 16 ounces pineapple chunks, drained
- 1⁄4 cup maraschino cherry, drained
- 3⁄4 cup shredded coconut
- Mix all ingredients – put in refrigerator for around an hour.
my family always made ours with fruit salad 2 chopped apples salad dressing and sour cream with a little of the fruit salad juice to right consistency top wih marshmellow and cocnut
This was a dish made for our Easter dinner and it was enjoyed. The maraschino cherries seemed to not fit in with the pineapple and mandarin oranges. Their texture was different and didnt have a good mouth feel. Instead of 16 ounces of sour cream I used about 8 ounces or a little more since we dont like a soupier dressing. Not everyone likes coconut so I served it on the side for those who wanted it to help themselves. Will definitely make this ambrosia again with the adjustments and probably add more mandarin oranges and pineapple to make up for the maraschino cherries.
