A light melon salad marinated with refreshing mint.This makes a nice first course or desert.Original recipe from Frida's Fiesta.Cook time is chill time.
- 3 cups watermelon
- 3 cups cantaloupe
- 2 limes, juice only
- 1⁄2 cup fresh mint leaves
- 2 tablespoons unrefined sugar (or to taste)
- Prepare the melon by either cubing them in small pieces or using a melon baller to make 3 cups of each .Add chopped mint sprigs,lime juice and sugar to taste.
- Cover and chill for 30 minutes before serving.
