- 2.46 ml chopped fresh tarragon
- 29.58 ml apple cider vinegar (optional)
- 7.39 ml butter
- 1 minced garlic clove
- 226.79 g tilapia fillet
directions
- In a microwavable baking dish, arrange tilapia fillets in a single layer. Dot with pieces of butter, and minced garlic. Sprinkle over fresh tarragon. Cover with waxed paper and microwave on high for 2 minutes.
- Turn fillets over, recover, and continue to microwave on high for a further 2 minutes. Remove immediately, sprinkle with apple cider vinegar, and serve.

Excellent! I couldn't believe how quickly we were eating lunch. I used fillets straight from the freezer and couldn't be happier with the ease of preparation and the overall flavor. My toddler and I both enjoyed this. I liked the combination of tarragon and cider vinegar, but no one flavor overpowered another and everything was a nice compliment to the fish. Wow, this was such a great find! I often plan to make fish but run out of time to prep and bake it. This was in my microwave for a total of 5 1/2 minutes (I'm picky about doneness), just enough time for me to chop a salad to go with it. I'm sure I will revisit this over and again, with new spices to fit my mood. I used oregano this time instead of tarragon, as I served it with a couscous dish with Italian flavors. I also used garlic powder instead of fresh (for shame!) because I wanted the garlic flavor to be evenly distributed. The vinegar is a great touch--I definitely recommend it and am sure I will experiment with other vinegars. Thanks for posting!
