haven't tried it yet, but it's supposed to be a healthier version of beans & cheese.
- 1⁄2 cup black beans
- 1⁄4 cup low fat cottage cheese
- 1 dash hot pepper sauce
- 1 dash crushed red pepper flakes
- 1 dash salt
- 1 dash black pepper
- Heat the beans and cottage cheese together on stove to the desired temperature.
- pour in a bowl and season with salt, black pepper and the crushed red pepper or cayenne if you like it spicy.
I might try this cold. I followed the recipe and the cheese ended up strangely clumpy and the rest was watery. I strained it and mixed it with brown rice and salsa and a bit of cheddar cheese and it was OK, nothing special.
I made this but I didnt heat it up. I actually chilled it before eating it and found it to be quite yummy.
