Mellow Yellow Jello Salad

"This is a different jello salad for you. I get tired of the same ones we always have, so when my friend gave me this one I tried it. It's a really nice, and very pretty salad. We loved it! Needs chilling time."

  • 2 cans crushed pineapple, drained
  • 1 (6 ounce) box lemon Jell-O gelatin
  • 2 cups 7-Up soda
  • 2 cups pineapple juice
  • 4 tablespoons flour
  • 4 tablespoons butter
  • 2 eggs
  • 2 cups whipped topping

directions

  • Mix the pineapple, jello, and 7up.
  • Pour into a 9x13 dish.
  • Put into refrigerator to set.
  • In saucepan, mix juice, flour, butter and eggs.
  • Cook and stir, on med, bring to a boil.
  • Boil for 1 minute.
  • Allow to cool, while jello sets.
  • Mix the cooled cooked mixture with the whipped topping.
  • Spread over the jello.

  1. The jello wouldn't set for me! Its been sitting for about 7 hours, and it is still like koolaid! Grrrr!!!!
     
  2. This was good! Kids loved it. I did add a dash of cardoman to the cooked mixture. I have done this with pineapple and lemon jello before. I will make for a company dinner, it is good.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
