Matcha Green Tea and Strawberry Rice Crispie Treats

- 3 tablespoons butter
- 40 marshmallows
- 6 cups brown crisp rice cereal
- 5⁄8 ounce freeze dried strawberries
- 1⁄2 tablespoon matcha green tea
directions
- Pulverize strawberries in a coffee mill or blender. Set aside. In large saucepan melt 1.5 tbsp.butter over low heat. Add marshmallows and stir until completely melted. Add pulverized strawberries. Mix quickly. Remove from heat. Add 3 cups crisped rice cereal. Stir until well coated. Rub hands in olive oil or butter until well-coated and press rice treats into a 9 x 11 pan, pressing down and only using half the pan.
- In large saucepan melt 1.5 tbsp.butter over low heat. Add marshmallows and stir until completely melted. Add matcha powder. Mix quickly. Remove from heat. Add 3 cups crisp rice cereal. Stir until well coated. Rub hands in olive oil or butter until well-coated and press rice treats into a 9 x 11 pan, pressing down and using the other half of the pan.
- Cut rice treats into squares, aligning on a plate in a checkerboard pattern. Alternatively, you can use a smaller 8" square pyrex dish and layer the strawberry crispies on top of the matcha crispies. You can also form them into small balls.

I moved to Seattle from Alaska in August of 2001. I am a nutrition graduate from Bastyr Naturopathic University and am a personal trainer and holistic health counselor (receiving additional education from the Institute for Integrative Nutrition). I have opened up a practice in the Seattle area and love to assist people in meeting their health, fitness, and nutrition goals in person and by phone. I also love trying new recipes and testing them out of friends and family, but have missed cooking a great deal while transitioning from a student to a business owner. I'm passionate about sustainable food, running, nutrition, individual and world peace, turtles, and my friends. I have a strong dislike for cold weather and violence. If I had a month off and enough cash to do so, I would travel to Costa Rica and explore as much of the land there that I could get my hands on (then buy property for a wellness center)! If I had a month off with no money, I'd focus on my running, trying new recipes, deepening existing friendships and sleeping in!
