    Directions:

      Heat a large saucepan over medium heat. When fully heated, add olive oil and heat for about 30 seconds. (They say you shouldn’t heat the oil by itself for any longer than that…)

      Add the garlic and sauté until it’s very lightly golden on the edges. (Don’t let it burn! Shouldn’t be a problem, though, if you use the suggested amount of oil and temperature.).

      Add tomatoes. Turn heat up just a bit until mixture starts to bubble up, but not boil.
    4. 4
      Place dried oregano in palm of one hand and use other to crush it over the pot (this releases the oils and flavor in the oregano). Add in salt and peppers and stir.

      Lower heat to medium-low and cover pot, simmering for 20 minutes. Check occasionally to stir.

      Love love LOVE this sauce!! It's extremely similar to a little Italian place by my house. The garlic provides a surprsing "brightness" to the sauce; at first, I was convinced they added lemon juice to their sauce, until I learned to make it at home and realized it's the garlic (and probably the salt...). So good! Thanks for posting, Aubry! teehee
