  • Toss one pound pecans with the maple syrup and approximately 1/4 cup of balsamic to taste (look for a nice sweet/tangy balance).
  • Roast on parchment lined baking sheet at 325 degrees until fragrant and glazed. (about 15 minutes), then sprinkle generously with sea salt and let cool.
  • store in an airtight container at room temperature.

  1. Interesting take on the usual spiced or sweet nuts. As a diabetic I am pretty much staying away from pure maple syrup so I subbed Cary's Sugar Free Maple and a beaten egg white. I was using a homemade fig balsamic so when the nuts came out of the oven I used the same spices I would in a fig cake- a little ginger, some mace and some lemon zest. These were terrific. I loved the balsamic taste with the nuts. Great recipe!
     
  2. Just finished making these and they are amazing!!! I didn't know if I had a pound or not, so I mixed enough maple syrup and balsamic vinegar to coat the nuts, and kept tasting and tweaking until it suited me. I used red balsamic vinegar I had bought from Sam's Club about a year ago. It's a big bottle and when I had bought it the taste wasn't so good, but after some time the vinegar gets thicker, sweeter and all around better. Then roasted then in a pan lined with parchment paper - it really help keep the mess down. Also turned the nuts during the roasting to help the maple/balsamic coat the nuts better. This recipe is a definite keeper.
     
  3. What an interesting flavor! My balsamic vinegar was quite sweet, so I actually used a little more than 1/4 cup to get the right flavor. After roasting they seemed a little TOO sweet until I added the salt, which made them perfect. I'm so excited to put these in my Christmas gift baskets!

  5. These are fantastic. My bag of pecans was 400 grams, just an ounce or so shy of a pound. So there was a little bit too much liquid and I had to pour a bit off. Other than this little glitch, preparation was quite easy. I will certainly be making these again.

Tweaks

  1. I made these up to take to the beach with us yesterday for nibbles. Used walnuts in place of pecans. Like Paula, there was too much of the syrup, so I just drained off before roasting and used the extra in salad dressing! Very taste.

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
