Lentils are such a good-for-you food, and served over brown rice, make a complete meal. This recipe is a combination of several, and has a wonderful sweet and spicy flavor. Add water if they become too thick. Leftovers can be frozen.

This is a good, flavorful lentil recipe. I used 1 lb of lentils which was 2 cups because I didn't want to have 1/2 cup left. I added a bit more spice and 5 cups of water because of this. I also didn't have tomato paste so I used crushed tomatoes. Thanks.

  1. Bring lentils to a boil in the water and simmer 25 minutes.
  2. In a skillet, saute onion and green pepper in oil until soft.
  3. Add to lentils, along with all other ingredients.
  4. Simmer an additional 20 minutes until lentils are cooked, but not mushy.
